Description

This decadent chocolate mousse cake filling is the perfect creamy, rich layer for your next special occasion cake. It’s easy to make and elevates any chocolate cake to a gourmet dessert.


Ingredients

  • 12 ounces (340g) bittersweet chocolate, finely chopped
  • 1 cup (240ml) heavy cream
  • 1/4 cup (60ml) whole milk
  • 1 tablespoon unsalted butter
  • 1/4 teaspoon salt
  • 3 large eggs, separated
  • 1/4 cup (50g) granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. In a heatproof bowl set over a saucepan of simmering water (or a double boiler), melt the chocolate, heavy cream, milk, butter, and salt, stirring until smooth. Remove from heat.
  2. In a separate clean bowl, whisk the egg yolks with half of the sugar until pale and slightly thickened.
  3. Whisk a small amount of the warm chocolate mixture into the egg yolks to temper them, then pour the yolk mixture into the remaining chocolate. Stir to combine.
  4. In a clean, dry bowl, beat the egg whites with a mixer until soft peaks form. Gradually add the remaining sugar and continue beating until stiff, glossy peaks form.
  5. Gently fold one-third of the whipped egg whites into the chocolate mixture to lighten it. Then, gently fold in the remaining egg whites until just combined. Be careful not to overmix.
  6. Stir in the vanilla extract.
  7. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the mousse to set.
  8. Use as a filling between cake layers.

Notes

  • For a richer flavor, use a higher percentage of cacao in your chocolate.
  • Ensure your eggs are at room temperature for optimal whipping.
  • The mousse can be made a day in advance.
