Description

Crispy and delicious zucchini tots are a fun and healthy alternative to traditional tater tots. This easy recipe uses fresh zucchini, cheese, and breadcrumbs for a perfect snack or side dish.


Ingredients

  • 2 medium zucchini, grated
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 large egg, lightly beaten
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. Grate the zucchini using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out as much excess water as possible. This is crucial for crispy tots!
  2. In a large bowl, combine the squeezed zucchini, cheddar cheese, Parmesan cheese, breadcrumbs, egg, flour, garlic powder, onion powder, salt, and pepper. Mix well until everything is evenly combined.
  3. Heat about 1 inch of vegetable oil in a large skillet or deep fryer to 350°F (175°C).
  4. Scoop out rounded tablespoons of the zucchini mixture and shape them into small tot shapes.
  5. Carefully place the tots into the hot oil, being careful not to overcrowd the pan. Fry for about 2-3 minutes per side, or until golden brown and crispy.
  6. Remove the tots from the oil with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
  7. Serve immediately with your favorite dipping sauces, such as ketchup, ranch, or marinara.

Notes

  • For extra crispy tots, you can freeze the shaped tots for about 30 minutes before frying.
  • Feel free to add other seasonings to your liking, such as paprika or Italian seasoning.
  • If you don’t have a deep fryer, a large skillet works perfectly fine. Just make sure the oil is deep enough to submerge the tots.
