- 2 medium zucchini, grated
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 1 large egg, lightly beaten
- 1/4 cup all-purpose flour
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- Grate the zucchini using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out as much excess water as possible. This is crucial for crispy tots!
- In a large bowl, combine the squeezed zucchini, cheddar cheese, Parmesan cheese, breadcrumbs, egg, flour, garlic powder, onion powder, salt, and pepper. Mix well until everything is evenly combined.
- Heat about 1 inch of vegetable oil in a large skillet or deep fryer to 350°F (175°C).
- Scoop out rounded tablespoons of the zucchini mixture and shape them into small tot shapes.
- Carefully place the tots into the hot oil, being careful not to overcrowd the pan. Fry for about 2-3 minutes per side, or until golden brown and crispy.
- Remove the tots from the oil with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
- Serve immediately with your favorite dipping sauces, such as ketchup, ranch, or marinara.
Notes
- For extra crispy tots, you can freeze the shaped tots for about 30 minutes before frying.
- Feel free to add other seasonings to your liking, such as paprika or Italian seasoning.
- If you don’t have a deep fryer, a large skillet works perfectly fine. Just make sure the oil is deep enough to submerge the tots.
