Ingredients

  • 2 cups grated zucchini (about 2 medium zucchinis, ends trimmed)
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk (or 1/2 cup milk mixed with 1/2 teaspoon lemon juice or vinegar, let stand for 5 minutes)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or a bundt pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
  6. Gently fold in the grated zucchini.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 50-60 minutes for a loaf pan, or 30-40 minutes for a bundt pan, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.

Notes

  • For an extra touch, you can add 1/2 cup chopped nuts (like walnuts or pecans) or 1/2 cup chocolate chips to the batter along with the zucchini.
  • A simple glaze made with powdered sugar and a little milk or lemon juice can be drizzled over the cooled cake.
  • Ensure your zucchini is well-drained after grating to prevent a soggy cake. Squeeze out excess moisture with paper towels or a clean kitchen towel.
