Description

Ingredients

  • 1 medium zucchini, grated
  • 1/2 teaspoon salt, plus more to taste
  • 4 ounces cream cheese, softened
  • 1 large egg
  • 1 clove garlic, minced
  • 2 tablespoons fresh dill, chopped, plus more for garnish
  • 2 tablespoons fresh chives, chopped, plus more for garnish
  • 1/4 teaspoon black pepper
  • 1 sheet (about 9.5 oz) frozen puff pastry, thawed

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin.
  2. In a large bowl, combine the shredded zucchini, 1/2 teaspoon salt, and let it sit for 10 minutes to draw out moisture. Squeeze out as much liquid as possible from the zucchini using your hands or a clean kitchen towel.
  3. In a separate bowl, whisk together the cream cheese, egg, minced garlic, chopped fresh dill, chopped fresh chives, and black pepper until well combined.
  4. Add the squeezed zucchini to the cream cheese mixture and stir until evenly distributed.
  5. Unroll the puff pastry sheet and cut it into 12 equal squares.
  6. Gently press each puff pastry square into a muffin tin cup, creating a small shell.
  7. Spoon the zucchini and cream cheese mixture evenly into each pastry shell.
  8. Bake for 20-25 minutes, or until the puff pastry is golden brown and puffed, and the filling is set.
  9. Let the tartlets cool in the muffin tin for 5 minutes before carefully removing them.
  10. Garnish with extra fresh dill or chives before serving warm.

Notes

  • For an extra layer of flavor, you can add a sprinkle of grated Parmesan cheese to the zucchini mixture.
  • If you don’t have fresh herbs, you can use 1 teaspoon of dried dill and 1 teaspoon of dried chives.
