Description

A delightful and savory Zucchini Tart, perfect for a light lunch or appetizer. This recipe features a flaky crust filled with tender zucchini, creamy cheese, and aromatic herbs.


Ingredients

  • 1 sheet puff pastry, thawed
  • 2 medium zucchinis, thinly sliced
  • 1 tablespoon olive oil
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Unroll the puff pastry sheet and place it on a baking sheet lined with parchment paper. Score a 1-inch border around the edges of the pastry, being careful not to cut all the way through. Prick the inside of the border with a fork.
  2. In a skillet, heat the olive oil over medium heat. Add the sliced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. In a medium bowl, combine the ricotta cheese, Parmesan cheese, beaten egg, and dried oregano. Season with salt and pepper. Stir in the cooked onion and garlic mixture.
  4. Arrange the thinly sliced zucchini in an overlapping pattern within the scored border of the puff pastry.
  5. Spoon the ricotta mixture evenly over the zucchini.
  6. Bake for 20-25 minutes, or until the puff pastry is golden brown and puffed up, and the filling is set.
  7. Let the tart cool slightly before slicing. Garnish with fresh basil leaves, if desired.

Notes

  • For a crispier crust, you can blind bake the puff pastry for 10 minutes before adding the filling.
  • Feel free to add other herbs like thyme or rosemary to the ricotta mixture.
