Description

  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup shredded zucchini (squeezed dry)
  • For the glaze: 1 cup powdered sugar, 2-3 tablespoons milk, 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt. Gradually add to butter mixture, mixing until just combined.
  4. Fold in the shredded zucchini until evenly distributed. Dough will be soft.
  5. Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart. Flatten slightly with the back of a spoon.
  6. Bake for 10-12 minutes or until edges are lightly golden. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
  7. For glaze: whisk powdered sugar, 2 tablespoons milk, and vanilla until smooth. Add more milk if needed. Drizzle over cooled cookies. Let set before serving.

Notes

  • Be sure to squeeze the shredded zucchini in a clean kitchen towel to remove excess moisture; this prevents the cookies from being too wet.
  • Store cookies in an airtight container at room temperature for up to 5 days.
