Ingredients

  • 1 large egg

  • For the Glaze:
  • 1/2 cup powdered sugar
  • 1 tablespoon milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  3. Cut the cold butter into the flour mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. In a separate small bowl, whisk together the heavy cream, egg, vanilla extract, and lemon zest.
  5. Gently fold the grated zucchini into the dry ingredients, then pour the wet ingredients over the top. Stir until just combined; do not overmix.
  6. Turn the dough onto a floured surface and pat into an 8-inch circle. Cut into 8 equal wedges.
  7. Place wedges on the baking sheet and bake for 18-22 minutes, or until the tops are golden brown.
  8. Allow to cool on a wire rack. Once cooled, whisk together glaze ingredients and drizzle over the scones.
