Description

These Zucchini Hand Pies are a delightful and surprisingly delicious way to use up fresh zucchini. Encased in a flaky, buttery crust and filled with a sweet, spiced zucchini mixture, they make for a perfect dessert or snack.


Ingredients

  • 2 cups grated zucchini, squeezed dry
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon unsalted butter, melted
  • 1 package (2 sheets) puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (optional, for topping)

Instructions

  1. Preheat your oven to 400°F (200°C). Line baking sheets with parchment paper.
  2. In a medium bowl, combine the grated zucchini, granulated sugar, flour, cinnamon, nutmeg, lemon juice, and melted butter. Mix well until all ingredients are incorporated.
  3. Unfold the puff pastry sheets. Cut each sheet into four equal squares.
  4. Spoon about 2-3 tablespoons of the zucchini filling onto one half of each pastry square, leaving a small border.
  5. Fold the other half of the pastry over the filling to create a triangle or rectangle. Crimp the edges with a fork to seal.
  6. Place the hand pies on the prepared baking sheets.
  7. Brush the tops of the hand pies with the beaten egg wash. If desired, sprinkle with coarse sugar.
  8. Cut a few small slits in the top of each hand pie to allow steam to escape.
  9. Bake for 20-25 minutes, or until golden brown and puffed.
  10. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a richer flavor, you can add a pinch of ground cloves to the filling.
  • Ensure the zucchini is well-drained to prevent a soggy filling.
  • These hand pies are best served warm or at room temperature.
