Description

  • 1/2 cup all-purpose flour
  • 1/4 cup finely grated Parmesan cheese

  • 1 clove garlic, minced

  • 1/4 teaspoon black pepper
  • Vegetable oil, for frying

For the Creamy Dill Dipping Sauce:

  • 1/2 cup sour cream
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Prepare the Zucchini: Grate the zucchini using a box grater. Place the grated zucchini in a colander and sprinkle with salt. Let it sit for 10-15 minutes to draw out excess moisture. Gently squeeze out any excess water from the zucchini with your hands or a clean kitchen towel.
  2. Make the Fritter Batter: In a large bowl, combine the squeezed zucchini, flour, Parmesan cheese, egg, chives, minced garlic, salt, and pepper. Mix well until everything is evenly combined.
  3. Fry the Fritters: Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat. Once the oil is hot, drop spoonfuls of the zucchini mixture into the hot oil, flattening them slightly with the back of the spoon. Don’t overcrowd the skillet.
  4. Cook the Fritters: Fry the fritters for about 2-3 minutes per side, or until golden brown and crispy. Remove the fritters from the skillet and place them on a plate lined with paper towels to drain excess oil.
  5. Prepare the Dipping Sauce: While the fritters are frying, prepare the dipping sauce. In a small bowl, combine the sour cream, chopped fresh dill, lemon juice, salt, and pepper. Mix well.
  6. Serve: Serve the zucchini fritters immediately with the creamy dill dipping sauce.

Notes

  • For extra crispy fritters, make sure to squeeze out as much moisture as possible from the zucchini.
  • Feel free to add other herbs to the fritter batter, such as parsley or oregano.
  • If you don’t have fresh dill for the dipping sauce, you can use dried dill, but use about 1 teaspoon.
