- 1/2 cup all-purpose flour
- 1/4 cup finely grated Parmesan cheese
- 1 large egg, lightly beaten
- 1/4 cup chopped fresh chives

- 1/4 teaspoon black pepper
- Vegetable oil, for frying
For the Creamy Dill Dipping Sauce:
- 1/2 cup sour cream
- 2 tablespoons chopped fresh dill
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Prepare the Zucchini: Grate the zucchini using a box grater. Place the grated zucchini in a colander and sprinkle with salt. Let it sit for 10-15 minutes to draw out excess moisture. Gently squeeze out any excess water from the zucchini with your hands or a clean kitchen towel.
- Make the Fritter Batter: In a large bowl, combine the squeezed zucchini, flour, Parmesan cheese, egg, chives, minced garlic, salt, and pepper. Mix well until everything is evenly combined.
- Fry the Fritters: Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat. Once the oil is hot, drop spoonfuls of the zucchini mixture into the hot oil, flattening them slightly with the back of the spoon. Don’t overcrowd the skillet.
- Cook the Fritters: Fry the fritters for about 2-3 minutes per side, or until golden brown and crispy. Remove the fritters from the skillet and place them on a plate lined with paper towels to drain excess oil.
- Prepare the Dipping Sauce: While the fritters are frying, prepare the dipping sauce. In a small bowl, combine the sour cream, chopped fresh dill, lemon juice, salt, and pepper. Mix well.
- Serve: Serve the zucchini fritters immediately with the creamy dill dipping sauce.
Notes
- For extra crispy fritters, make sure to squeeze out as much moisture as possible from the zucchini.
- Feel free to add other herbs to the fritter batter, such as parsley or oregano.
- If you don’t have fresh dill for the dipping sauce, you can use dried dill, but use about 1 teaspoon.
- You can make the dipping sauce ahead of time and chill it in the refrigerator for at least 30 minutes to allow the flavors to meld.
