Description

Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg

  • 1 cup finely grated zucchini, squeezed of excess moisture
  • 1 large egg, room temperature
  • ½ cup Greek yogurt
  • ¼ cup vegetable oil
  • 1 tsp vanilla extract
  • For the Glaze:
  • 1 cup powdered sugar
  • 2 tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a donut pan with cooking spray.
  2. In a large bowl, whisk together the flour, sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a medium bowl, whisk the egg, Greek yogurt, oil, and vanilla extract until smooth. Add the grated zucchini and stir to combine.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
  5. Spoon the batter into a piping bag or large zip-top bag with the corner snipped off. Pipe the batter into the prepared donut cavities, filling them about ¾ full.
  6. Bake for 12–15 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the donuts to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  8. While cooling, whisk together the powdered sugar, milk, and vanilla in a small bowl until smooth. Dip the cooled donuts into the glaze and let them set before serving.

Notes

  • Ensure you squeeze the grated zucchini well using a clean kitchen towel or paper towels to prevent the donuts from becoming soggy.
  • For a richer flavor, you can swap the vegetable oil for melted butter.
