  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup finely grated zucchini, squeezed dry

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch square baking pan.
  2. In a small bowl, combine the flour, brown sugar, and cinnamon for the topping. Stir in the melted butter until crumbly and set aside.
  3. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  4. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
  5. Gently fold the dry ingredients into the wet mixture, then stir in the grated zucchini until just combined.
  6. Spread the batter evenly into the prepared pan. Sprinkle the crumb topping generously over the surface.
  7. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for at least 20 minutes before slicing.

Notes

  • Make sure to squeeze the grated zucchini well with a paper towel or cheesecloth to remove excess moisture; this prevents the cake from becoming soggy.
