Ingredients
Scale
- 1 cup (2 sticks) unsalted butter, softened
- 1 3/4 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 1/2 cups grated zucchini, squeezed dry
- 1 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the grated zucchini and chocolate chips (if using).
- Spread the batter evenly into the prepared baking pan.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bars cool completely in the pan before cutting into squares.
- Optional: Frost with your favorite cream cheese frosting or a simple glaze.
Notes
- Ensure your grated zucchini is well-drained to prevent soggy bars. You can do this by pressing it with paper towels or squeezing it in a clean kitchen towel.
- For a richer flavor, you can add 1/2 cup of chopped nuts like walnuts or pecans along with the chocolate chips.
- These bars store well in an airtight container at room temperature for up to 3 days.
