  • 1 1/2 cups finely grated zucchini (squeezed dry)

  • 1/4 tsp ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the bottom of the prepared pan. Bake for 8 minutes, then set aside to cool.
  3. In a large mixing bowl, beat the cream cheese and 3/4 cup sugar until smooth and creamy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla, cinnamon, and nutmeg.
  5. Gently fold in the grated, well-drained zucchini until evenly distributed.
  6. Pour the batter over the prepared crust and smooth the top with a spatula.
  7. Bake for 40-45 minutes, or until the center is set but still slightly jiggly.
  8. Turn off the oven and let the cheesecake sit inside with the door cracked for 30 minutes.
  9. Remove from the oven, cool to room temperature, then refrigerate for at least 4 hours before serving.
