Description

These moist and delicious zucchini bars are packed with fresh zucchini and topped with a tangy cream cheese frosting. They’re a perfect way to use up your garden’s bounty!


Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 1 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups grated zucchini, packed
  • 1 cup chopped walnuts or pecans (optional)

Cream Cheese Frosting:

  • 8 ounces cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 34 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, and salt.
  3. In a separate bowl, cream together the granulated sugar, brown sugar, and oil. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the grated zucchini and nuts (if using).
  6. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the bars cool completely in the pan before frosting.
  8. Cream Cheese Frosting Instructions:

  9. In a large bowl, beat the cream cheese and butter until smooth.
  10. Gradually add the powdered sugar, beating until well combined and fluffy.
  11. Stir in the vanilla extract.
  12. Once the bars are completely cool, frost them with the cream cheese frosting and cut into squares.

Notes

  • For a spicier flavor, add 1/4 teaspoon of ground nutmeg.
  • If you don’t have brown sugar, you can substitute with 1 cup of granulated sugar and 2 tablespoons of molasses.
