These moist and delicious zucchini bars are packed with fresh zucchini and topped with a tangy cream cheese frosting. They’re a perfect way to use up your garden’s bounty!

- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 1 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups grated zucchini, packed
- 1 cup chopped walnuts or pecans (optional)
Cream Cheese Frosting:
- 8 ounces cream cheese, softened
- 1/2 cup (1 stick) unsalted butter, softened
- 3–4 cups powdered sugar, sifted
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together the flour, baking soda, cinnamon, and salt.
- In a separate bowl, cream together the granulated sugar, brown sugar, and oil. Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the grated zucchini and nuts (if using).
- Pour the batter into the prepared pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bars cool completely in the pan before frosting.
- In a large bowl, beat the cream cheese and butter until smooth.
- Gradually add the powdered sugar, beating until well combined and fluffy.
- Stir in the vanilla extract.
- Once the bars are completely cool, frost them with the cream cheese frosting and cut into squares.
Cream Cheese Frosting Instructions:
Notes
- For a spicier flavor, add 1/4 teaspoon of ground nutmeg.
- If you don’t have brown sugar, you can substitute with 1 cup of granulated sugar and 2 tablespoons of molasses.
