Description

This White Chocolate Raspberry Bundt Cake is a stunning dessert that combines the richness of white chocolate with the tartness of fresh raspberries. It’s perfect for special occasions or a sweet treat any day of the week.

Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 8 ounces white chocolate, chopped
  • 1 cup fresh raspberries, plus more for garnish
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 10-inch bundt pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  5. Melt the white chocolate in a double boiler or microwave, stirring until smooth. Let cool slightly.
  6. Gently fold the melted white chocolate and raspberries into the batter.
  7. Pour batter into the prepared bundt pan.
  8. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  10. Dust with powdered sugar and garnish with fresh raspberries, if desired.

Notes

  • For a richer flavor, use high-quality white chocolate.
  • Be careful not to overmix the batter, as this can result in a tough cake.
  • If you don’t have a bundt pan, you can bake this cake in a 9×13 inch pan. Baking time may vary.
  • Store leftover cake in an airtight container at room temperature for up to 3 days.
