Instructions
- Make the Cake: Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a bowl, whisk together eggs and sugar until pale and slightly thickened.
- In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour batter into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- Make the Mousse: In a heatproof bowl set over a simmering pot of water (or in the microwave in 30-second intervals), melt the white chocolate, stirring until smooth. Let cool slightly.
- In a separate bowl, whip 3/4 cup of the heavy cream and sugar until stiff peaks form.
- In another bowl, whip the remaining 1/4 cup of heavy cream until soft peaks form.
- Gently fold the melted white chocolate and vanilla extract into the whipped cream.
- Gently fold in the whipped cream with sugar.
- Assemble the Cake: Slice the cooled cake horizontally into two layers.
- Place one cake layer on a serving plate or cake stand.
- Spread half of the white chocolate mousse evenly over the cake layer.
- Top with the second cake layer.
- Spread the remaining mousse over the top and sides of the cake.
- Garnish with chocolate shavings or fresh berries, if desired.
- Refrigerate for at least 2 hours, or preferably overnight, before serving.

- For a richer flavor, use high-quality white chocolate.
- If you prefer a less sweet mousse, reduce the amount of sugar slightly.
- The cake can be made a day in advance. Store it in the refrigerator.
