  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour

  • 8 ounces white chocolate, chopped
  • 1 cup heavy cream, divided

Instructions

  1. Make the Cake: Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a bowl, whisk together eggs and sugar until pale and slightly thickened.
  3. In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour batter into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  7. Make the Mousse: In a heatproof bowl set over a simmering pot of water (or in the microwave in 30-second intervals), melt the white chocolate, stirring until smooth. Let cool slightly.
  8. In a separate bowl, whip 3/4 cup of the heavy cream and sugar until stiff peaks form.
  9. In another bowl, whip the remaining 1/4 cup of heavy cream until soft peaks form.
  10. Gently fold the melted white chocolate and vanilla extract into the whipped cream.
  11. Gently fold in the whipped cream with sugar.
  12. Assemble the Cake: Slice the cooled cake horizontally into two layers.
  13. Place one cake layer on a serving plate or cake stand.
  14. Spread half of the white chocolate mousse evenly over the cake layer.
  15. Top with the second cake layer.
  16. Spread the remaining mousse over the top and sides of the cake.
  17. Garnish with chocolate shavings or fresh berries, if desired.
  18. Refrigerate for at least 2 hours, or preferably overnight, before serving.
