Ingredients

  • 1 cup unsweetened applesauce
  • 1 cup plant-based milk (almond, soy, or oat)
  • 2 teaspoons vanilla extract

  • 1 cup boiling water

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. Add the sugar to the dry ingredients and whisk to combine.
  4. In a separate bowl, combine the applesauce, plant-based milk, vanilla extract, and apple cider vinegar.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Gradually add the boiling water and mix until the batter is smooth. The batter will be thin.
  7. Pour the batter into the prepared cake pan.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  10. Frost with your favorite vegan chocolate frosting.
