- For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons vegan butter, melted
- For the Filling:
- 2 (13.5 ounce) cans full-fat coconut milk, refrigerated overnight
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- Pinch of salt
- Optional Toppings:
- Shredded coconut, toasted
- Vegan whipped cream
Instructions
- Make the Crust: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted vegan butter. Press the mixture firmly into a 9-inch pie plate. Bake for 8-10 minutes, or until lightly golden. Let cool completely.
- Make the Filling: Scoop out the thick, solidified coconut cream from the top of the refrigerated coconut milk cans, leaving the watery liquid behind (save this for smoothies!). Place the coconut cream in a mixing bowl.
- Add powdered sugar, vanilla extract, and salt to the coconut cream. Beat with an electric mixer on medium-high speed until light and fluffy, about 2-3 minutes.
- Assemble the Pie: Pour the coconut cream filling into the cooled pie crust. Spread evenly.
- Chill: Refrigerate the pie for at least 4 hours, or preferably overnight, to allow the filling to set.
- Serve: Before serving, top with toasted shredded coconut and vegan whipped cream, if desired.
Notes
- For best results, use full-fat coconut milk that has been refrigerated overnight. This allows the cream to separate and solidify.
- If you don’t have graham cracker crumbs, you can make your own by pulsing graham crackers in a food processor.
- Adjust the sweetness of the filling to your liking by adding more or less powdered sugar.
- Store leftover pie in the refrigerator for up to 3 days.
