  • 1/4 cup vegan butter, cold and cubed
  • For the Apple Filling:
  • 2 medium apples, peeled, cored, and sliced
  • 1 tbsp lemon juice
  • 1 tbsp granulated sugar
  • 1/2 tsp ground cinnamon

Instructions

  1. Prepare the Apples: In a bowl, toss the sliced apples with lemon juice, sugar, and cinnamon. Set aside.
  2. Make the Cake Batter: Preheat oven to 350°F (175°C). In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk together sugar, applesauce, plant-based milk, oil, apple cider vinegar, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the diced apples.
  5. Make the Crumble: In a bowl, combine flour, oats, brown sugar, and cinnamon. Cut in the vegan butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  6. Assemble the Cake: Pour the cake batter into a greased 9-inch round cake pan. Top with the prepared apple slices, then sprinkle the crumble evenly over the apples.
  7. Bake: Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
