- 1/4 cup vegan butter, cold and cubed
- For the Apple Filling:
- 2 medium apples, peeled, cored, and sliced
- 1 tbsp lemon juice
- 1 tbsp granulated sugar
- 1/2 tsp ground cinnamon
Instructions
- Prepare the Apples: In a bowl, toss the sliced apples with lemon juice, sugar, and cinnamon. Set aside.
- Make the Cake Batter: Preheat oven to 350°F (175°C). In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk together sugar, applesauce, plant-based milk, oil, apple cider vinegar, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the diced apples.
- Make the Crumble: In a bowl, combine flour, oats, brown sugar, and cinnamon. Cut in the vegan butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Assemble the Cake: Pour the cake batter into a greased 9-inch round cake pan. Top with the prepared apple slices, then sprinkle the crumble evenly over the apples.
- Bake: Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve: Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Serve warm or at room temperature.
