- 1 teaspoon vanilla extract
- 1 cup granulated sugar
- 1/2 cup packed light brown sugar
- 4 large eggs
- 1/2 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- For the Tiramisu Layer:
- 1/2 cup heavy cream
- 1/4 cup mascarpone cheese
- 2 tablespoons powdered sugar
- 1/4 teaspoon vanilla extract
- For the Coffee Soak:
- 1/4 cup strong brewed coffee, cooled
- 1 tablespoon coffee liqueur (optional)
- For the Topping:
- Chocolate shavings or cocoa powder for dusting
Instructions
- Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
- In a medium saucepan, melt butter and bittersweet chocolate over low heat, stirring until smooth. Remove from heat and stir in espresso powder and vanilla extract.
- In a large bowl, whisk together granulated sugar and brown sugar. Add the melted chocolate mixture and whisk until combined.
- Whisk in the eggs one at a time, then whisk in the flour, cocoa powder, and salt until just combined. Do not overmix.
- Pour brownie batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs. Let cool completely.
- For the Tiramisu Layer: In a medium bowl, beat heavy cream, mascarpone cheese, powdered sugar, and vanilla extract until stiff peaks form.
- For the Coffee Soak: In a small bowl, combine cooled coffee and coffee liqueur (if using).
- Once the brownies are cooled, poke holes all over the surface with a fork or toothpick. Brush the coffee mixture over the brownies.
- Spread the mascarpone cream evenly over the brownies.
- Refrigerate for at least 2 hours, or until the tiramisu layer is set.
- Before serving, dust with chocolate shavings or cocoa powder. Cut into squares and enjoy!
Notes
- For a richer flavor, use high-quality chocolate.
- If you don’t have coffee liqueur, you can omit it or add a touch more coffee.
