Ingredients

  • 8 ounces bittersweet chocolate, chopped
  • 1 teaspoon instant espresso powder
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 4 large eggs
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • For the Tiramisu Layer:
  • 1/2 cup heavy cream
  • 1/4 cup mascarpone cheese
  • 2 tablespoons powdered sugar
  • 1/4 teaspoon vanilla extract
  • For the Coffee Soak:
  • 1/4 cup strong brewed coffee, cooled
  • 1 tablespoon coffee liqueur (optional)
  • For the Topping:
  • Chocolate shavings or cocoa powder for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. In a medium saucepan, melt butter and bittersweet chocolate over low heat, stirring until smooth. Remove from heat and stir in espresso powder and vanilla extract.
  3. In a large bowl, whisk together granulated sugar and brown sugar. Add the melted chocolate mixture and whisk until combined.
  4. Whisk in the eggs one at a time, then whisk in the flour, cocoa powder, and salt until just combined. Do not overmix.
  5. Pour brownie batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs. Let cool completely.
  6. For the Tiramisu Layer: In a medium bowl, beat heavy cream, mascarpone cheese, powdered sugar, and vanilla extract until stiff peaks form.
  7. For the Coffee Soak: In a small bowl, combine cooled coffee and coffee liqueur (if using).
  8. Once the brownies are cooled, poke holes all over the surface with a fork or toothpick. Brush the coffee mixture over the brownies.
  9. Spread the mascarpone cream evenly over the brownies.
  10. Refrigerate for at least 2 hours, or until the tiramisu layer is set.
  11. Before serving, dust with chocolate shavings or cocoa powder. Cut into squares and enjoy!
