  • 1 medium sweet potato (about 1 cup cooked and mashed)
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. Cook the sweet potato: You can bake, boil, or microwave the sweet potato until it’s soft. Let it cool, then mash it thoroughly. You should have about 1 cup of mashed sweet potato.
  3. In a large bowl, whisk together the melted butter and sugar until well combined.
  4. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  5. Add the mashed sweet potato and mix until incorporated.
  6. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  7. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  8. Fold in the chocolate chips, if using.
  9. Pour the batter into the prepared baking pan and spread evenly.
  10. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  11. Let the brownies cool completely in the pan before cutting and serving.
