- 1 medium sweet potato (about 1 cup cooked and mashed)
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
- Cook the sweet potato: You can bake, boil, or microwave the sweet potato until it’s soft. Let it cool, then mash it thoroughly. You should have about 1 cup of mashed sweet potato.
- In a large bowl, whisk together the melted butter and sugar until well combined.
- Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
- Add the mashed sweet potato and mix until incorporated.
- In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Fold in the chocolate chips, if using.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
- Let the brownies cool completely in the pan before cutting and serving.
Notes
- For a richer flavor, use dark cocoa powder.
- You can add nuts, such as chopped walnuts or pecans, to the batter.
- Store leftover brownies in an airtight container at room temperature for up to 3 days.
