- 1 sheet (14.1 oz) frozen puff pastry, thawed
- 1 cup fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar, plus more for sprinkling
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- 1 large egg, beaten (for egg wash)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a medium bowl, combine the sliced strawberries, 1/4 cup sugar, cornstarch, and lemon juice. Gently toss to coat and let it sit for 10 minutes, allowing the strawberries to release some of their juices.
- On a lightly floured surface, unfold the puff pastry sheet. Cut the pastry into desired shapes (squares, rectangles, or circles).
- Spoon the strawberry mixture onto the center of each pastry shape, leaving a small border.
- Brush the edges of the pastry with the beaten egg (egg wash).
- Bake for 15-20 minutes, or until the pastry is golden brown and the strawberries are bubbly.
- Let the pastries cool slightly on the baking sheet before serving. Sprinkle with additional granulated sugar, if desired.
Notes
- For a richer flavor, you can add a pinch of salt to the strawberry mixture.
- If the strawberries are very juicy, you can remove some of the excess liquid before assembling the pastries to prevent the pastry from becoming soggy.
- Feel free to add other berries like raspberries or blueberries.
