Description

Ingredients

  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup (1 stick) cold unsalted butter, cut into cubes
  • ¼ cup cold vegetable shortening, cut into cubes
  • 46 tablespoons ice water
  • 1 quart fresh strawberries, hulled and sliced
  • ¾ cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 tablespoon butter, cut into small pieces (for topping)

Instructions

  1. Make the Crust: In a large bowl, whisk together flour and salt. Cut in cold butter and shortening using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  2. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Form into a disc, wrap in plastic, and chill for at least 30 minutes.
  3. Prepare the Filling: In a large bowl, combine sliced strawberries, sugar, cornstarch, lemon juice, vanilla extract, and a pinch of salt. Gently toss to combine and let it sit for about 15 minutes to macerate.
  4. Assemble the Pie: Preheat oven to 375°F (190°C). On a lightly floured surface, roll out half of the chilled dough into a 12-inch circle. Transfer to a 9-inch pie plate.
  5. Pour the strawberry filling into the pie crust. Dot the top with small pieces of butter.
  6. Roll out the remaining dough and either place it on top as a full crust (cut vents for steam to escape) or cut into strips for a lattice top. If using a full crust, crimp the edges to seal.
  7. Bake the Pie: Bake for 50-60 minutes, or until the crust is golden brown and the filling is bubbling. If the crust starts to brown too quickly, cover the edges with foil.
  8. Let the pie cool completely on a wire rack before slicing and serving.

Notes

  • For a richer crust, use all butter and no shortening.
  • If the strawberries are very juicy, you might want to add an extra tablespoon of cornstarch.
  • Serve with a dollop of whipped cream or vanilla ice cream.
