A classic strawberry pie recipe with a flaky crust and sweet, juicy strawberry filling. Perfect for summer gatherings!

- 1 ½ cups all-purpose flour
- ½ teaspoon salt
- ½ cup (1 stick) cold unsalted butter, cut into cubes
- ¼ cup cold vegetable shortening, cut into cubes
- 4–6 tablespoons ice water
- 1 quart fresh strawberries, hulled and sliced
- ¾ cup granulated sugar
- 3 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 tablespoon butter, cut into small pieces (for topping)
Instructions
- Make the Crust: In a large bowl, whisk together flour and salt. Cut in cold butter and shortening using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Form into a disc, wrap in plastic, and chill for at least 30 minutes.
- Prepare the Filling: In a large bowl, combine sliced strawberries, sugar, cornstarch, lemon juice, vanilla extract, and a pinch of salt. Gently toss to combine and let it sit for about 15 minutes to macerate.
- Assemble the Pie: Preheat oven to 375°F (190°C). On a lightly floured surface, roll out half of the chilled dough into a 12-inch circle. Transfer to a 9-inch pie plate.
- Pour the strawberry filling into the pie crust. Dot the top with small pieces of butter.
- Roll out the remaining dough and either place it on top as a full crust (cut vents for steam to escape) or cut into strips for a lattice top. If using a full crust, crimp the edges to seal.
- Bake the Pie: Bake for 50-60 minutes, or until the crust is golden brown and the filling is bubbling. If the crust starts to brown too quickly, cover the edges with foil.
- Let the pie cool completely on a wire rack before slicing and serving.
Notes
- For a richer crust, use all butter and no shortening.
- If the strawberries are very juicy, you might want to add an extra tablespoon of cornstarch.
- Serve with a dollop of whipped cream or vanilla ice cream.
