  • For the Crust/Crumble:
  • 1 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 cup packed light brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, cold and cubed
  • For the Filling:
  • 4 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice

Instructions

  1. Prepare the Crust/Crumble: Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, whisk together the flour, oats, brown sugar, baking soda, and salt.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Reserve 2 cups of the crumble mixture for the topping.
  5. Press the remaining crumble mixture into the bottom of the prepared pan.
  6. Prepare the Filling: In a medium bowl, combine the sliced strawberries, granulated sugar, cornstarch, and lemon juice. Gently toss to combine.
  7. Pour the strawberry filling evenly over the crust.
  8. Sprinkle the reserved crumble topping over the strawberry filling.
  9. Bake: Bake for 40-45 minutes, or until the topping is golden brown and the filling is bubbly.
  10. Cool and Serve: Let the bars cool completely in the pan before lifting them out using the parchment paper overhang. Cut into squares and serve.

Notes

  • For best results, use fresh, ripe strawberries.
  • If you don’t have a pastry blender, you can use two knives to cut the butter into the flour mixture, or pulse in a food processor.
  • These bars can be stored in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
