- For the Crust/Crumble:
- 1 1/2 cups all-purpose flour
- 1 cup rolled oats
- 1 cup packed light brown sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, cold and cubed
- For the Filling:
- 4 cups fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
Instructions
- Prepare the Crust/Crumble: Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a large bowl, whisk together the flour, oats, brown sugar, baking soda, and salt.
- Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Reserve 2 cups of the crumble mixture for the topping.
- Press the remaining crumble mixture into the bottom of the prepared pan.
- Prepare the Filling: In a medium bowl, combine the sliced strawberries, granulated sugar, cornstarch, and lemon juice. Gently toss to combine.
- Pour the strawberry filling evenly over the crust.
- Sprinkle the reserved crumble topping over the strawberry filling.
- Bake: Bake for 40-45 minutes, or until the topping is golden brown and the filling is bubbly.
- Cool and Serve: Let the bars cool completely in the pan before lifting them out using the parchment paper overhang. Cut into squares and serve.
Notes
- For best results, use fresh, ripe strawberries.
- If you don’t have a pastry blender, you can use two knives to cut the butter into the flour mixture, or pulse in a food processor.
- These bars can be stored in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
