- 1.5 quarts (about 1.4L) vanilla ice cream, slightly softened

- 2 cups heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon pure vanilla extract
- 1/4 cup strawberry puree (optional, for color swirl)

Instructions
- Prepare the Pan: Line a 9-inch springform pan with plastic wrap, leaving an overhang on the sides for easy removal later.
- Make the Crust: In a medium bowl, combine the vanilla wafer crumbs, melted butter, and 2 tablespoons of sugar until fully incorporated and the mixture resembles wet sand. Press the mixture firmly and evenly into the bottom of the prepared springform pan. Freeze for at least 30 minutes while preparing the ice cream layers.
- Layer 1 (Strawberry): Remove the softened strawberry ice cream from its container and spread it evenly over the frozen crust. Work quickly to prevent melting. Smooth the top with an offset spatula. Return the pan to the freezer for at least 1 hour, or until firm.
- Layer 2 (Vanilla): If using, gently swirl 1/4 cup of strawberry puree into the softened vanilla ice cream. Spread the vanilla ice cream evenly over the firm strawberry layer. Smooth the top. Freeze for a minimum of 4 hours, or preferably overnight, until completely solid.
- Make the Whipped Topping: Just before serving, beat the heavy whipping cream, powdered sugar, and vanilla extract in a chilled bowl using an electric mixer until stiff peaks form.
- Assemble and Decorate: Remove the cake from the freezer. Carefully lift the cake out of the springform pan using the plastic wrap overhang. Frost the top and sides of the cake evenly with the homemade whipped cream.
- Garnish: Decorate the top edge of the cake with sliced fresh strawberries.
- Serve: Allow the cake to sit at room temperature for 5-10 minutes before slicing with a sharp knife dipped in hot water for clean cuts. Store leftovers tightly wrapped in the freezer.
Notes
- For a richer color, you can mix a few drops of red food coloring into the vanilla layer if you skip the strawberry puree swirl.
- If you prefer a different crust flavor, shortbread cookies or Oreos work beautifully as substitutes.
