Description

These strawberry crumble bars are a delightful treat, combining a buttery crumble topping with a sweet and tangy strawberry filling. They’re perfect for picnics, potlucks, or a simple dessert any day of the week!

Ingredients

Scale
  • For the Crumble:
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, cold, cut into cubes
  • For the Strawberry Filling:
  • 4 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice

Instructions

  1. Prepare the Crumble: In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt.
  2. Cut in the butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Prepare the Filling: In a separate bowl, combine the sliced strawberries, granulated sugar, cornstarch, and lemon juice. Gently toss to coat.
  4. Assemble the Bars: Press half of the crumble mixture into the bottom of a 9×13 inch baking dish.
  5. Pour the strawberry filling evenly over the crumble base.
  6. Sprinkle the remaining crumble mixture over the strawberry filling.
  7. Bake: Bake in a preheated oven at 375°F (190°C) for 35-40 minutes, or until the topping is golden brown and the filling is bubbly.
  8. Cool: Let the bars cool completely in the baking dish before cutting and serving.

Notes

  • For best results, use fresh, ripe strawberries.
  • You can substitute the strawberries with other berries like blueberries or raspberries.
  • Store leftover bars in an airtight container at room temperature for up to 3 days.
