Instructions

  1. Prepare the Crust: Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, or until lightly golden. Let cool.
  2. Make the Filling: In a large bowl, beat the cream cheese and sugar until smooth. Beat in the vanilla extract. Add the eggs one at a time, mixing until just combined. Do not overmix.
  3. Assemble the Cheesecake: Pour the cheesecake filling over the cooled crust.
  4. Bake the Cheesecake: Bake for 55-65 minutes, or until the edges are set and the center has a slight jiggle.
  5. Make the Strawberry Topping: While the cheesecake is baking, combine strawberries, sugar, and lemon juice in a saucepan. Bring to a simmer over medium heat. In a small bowl, whisk together cornstarch and water. Add to the strawberry mixture and cook, stirring constantly, until thickened, about 1-2 minutes. Let cool.
  6. Chill the Cheesecake: Let the cheesecake cool completely at room temperature, then refrigerate for at least 4 hours, or preferably overnight.
