Description

Indulge in these delightfully spooky Spiderweb Cheesecake Bars, perfect for Halloween parties or any occasion that calls for a touch of eerie sweetness. The creamy cheesecake filling is swirled with a dark chocolate ganache to create a mesmerizing spiderweb effect.

Ingredients

Scale
  • For the Crust:
  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • For the Cheesecake Filling:
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • For the Chocolate Ganache Spiderweb:
  • ½ cup heavy cream
  • 4 ounces semi-sweet chocolate, finely chopped

Instructions

  1. Make the Crust: Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides. In a medium bowl, combine graham cracker crumbs and ¼ cup sugar. Pour in melted butter and stir until well combined. Press the mixture evenly into the bottom of the prepared pan. Bake for 10 minutes. Let cool slightly.
  2. Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese with 1 cup sugar until smooth and creamy. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. Pour the cheesecake filling over the prepared crust.
  4. Make the Chocolate Ganache: In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and pour over the chopped chocolate. Let sit for 5 minutes, then whisk until smooth and glossy.
  5. Create the Spiderweb: Spoon dollops of the chocolate ganache over the cheesecake filling. Use a toothpick or skewer to gently swirl the chocolate into a spiderweb pattern, dragging the toothpick from the center outwards.
  6. Bake the Bars: Bake for 30-35 minutes, or until the edges are set and the center is slightly jiggly.
  7. Chill: Let the cheesecake bars cool completely in the pan on a wire rack. Once cooled, cover and refrigerate for at least 4 hours, or preferably overnight, before cutting into bars.
  8. Serve: Lift the cheesecake from the pan using the parchment paper overhang. Cut into bars and serve chilled.

Notes

  • For a more defined spiderweb, you can heat the ganache slightly before drizzling.
  • Ensure cream cheese and eggs are at room temperature for a smoother filling.
  • Store leftover cheesecake bars in an airtight container in the refrigerator for up to 3 days.
