This classic sour cherry pie recipe features a buttery, flaky crust and a sweet-tart filling that’s perfect for any occasion.

- 1 1/4 cups all-purpose flour, plus more for dusting
- 1/2 teaspoon salt
- 1/2 cup (1 stick) cold unsalted butter, cut into cubes
- 1/4 cup vegetable shortening, cold
- 4–6 tablespoons ice water
- 6 cups fresh sour cherries, pitted (or 4 cups frozen, thawed)
- 3/4 cup granulated sugar, plus more for sprinkling
- 1/4 cup cornstarch
- 1 tablespoon lemon juice
- 1/4 teaspoon almond extract (optional)
- 1 large egg, beaten (for egg wash)
Instructions
- Make the Crust: In a large bowl, whisk together the flour and salt. Cut in the butter and shortening using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Gradually add the ice water, 1 tablespoon at a time, mixing until the dough just comes together. Form into a disc, wrap in plastic wrap, and chill for at least 30 minutes.
- Prepare the Filling: In a large bowl, combine the pitted cherries, sugar, cornstarch, lemon juice, and almond extract (if using).
- Assemble the Pie: On a lightly floured surface, roll out half of the dough into a 12-inch circle. Transfer to a 9-inch pie plate.
- Pour the cherry filling into the crust.
- Roll out the remaining dough and either place it over the filling as a top crust or cut into strips for a lattice top. Crimp the edges to seal.
- Brush the top crust with the beaten egg and sprinkle with sugar.
- Bake the Pie: Bake in a preheated oven at 400°F (200°C) for 15 minutes. Reduce the oven temperature to 375°F (190°C) and bake for another 35-45 minutes, or until the crust is golden brown and the filling is bubbling.
- Let cool completely on a wire rack before serving.
Notes
- For a richer crust, use all butter and omit the shortening.
- If using frozen cherries, be sure to thaw them completely and drain off any excess liquid before using.
- Serve warm with a scoop of vanilla ice cream for a delightful treat.
