  • 1/2 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • Optional: Cinnamon or nutmeg for sprinkling

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 10-inch cast-iron skillet.
  2. In a large bowl, combine sliced peaches, 1/2 cup sugar, and lemon juice. Let it sit for 15 minutes.
  3. In a separate bowl, whisk together flour, 1 cup sugar, baking powder, and salt.
  4. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  5. Stir in milk and vanilla extract until just combined. Do not overmix.
  6. Pour the peach mixture into the prepared skillet.
  7. Drop spoonfuls of the batter evenly over the peaches.
