- Preheat oven to 375°F (190°C). Grease a 10-inch cast-iron skillet.
- In a large bowl, combine sliced peaches, 1/2 cup sugar, and lemon juice. Let it sit for 15 minutes.
- In a separate bowl, whisk together flour, 1 cup sugar, baking powder, and salt.
- Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Stir in milk and vanilla extract until just combined. Do not overmix.
- Pour the peach mixture into the prepared skillet.
- Drop spoonfuls of the batter evenly over the peaches.
- Sprinkle with cinnamon or nutmeg, if desired.
- Bake for 45-55 minutes, or until the crust is golden brown and the peaches are bubbly.
