- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup granulated sugar
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon salt
Instructions
- Preheat oven to 325°F (160°C).
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Gradually add the flour and salt, mixing until just combined. Do not overmix.
- On a lightly floured surface, gently knead the dough a few times.
- Roll out the dough to about 1/4 inch thickness.
- Cut into desired shapes using cookie cutters or a knife.
- Place cookies on ungreased baking sheets.
- Bake for 15-20 minutes, or until the edges are lightly golden.
- Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
Notes
- For a richer flavor, use salted butter and reduce the amount of salt.
- You can add a teaspoon of vanilla extract to the dough for extra flavor.
- Shortbread cookies can be stored in an airtight container at room temperature for up to a week.
