- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup milk
- Food coloring (various colors)
- Frosting (store-bought or homemade)
- Sprinkles and other decorations
Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
- Divide the batter among several bowls (depending on how many colors you want). Add a few drops of food coloring to each bowl and mix until the color is evenly distributed.
- Fill each cupcake liner about 2/3 full, alternating colors or layering them for a fun look.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
- Once cooled, frost the cupcakes and decorate with sprinkles and other desired decorations.
Notes
- For a fun twist, add a few chocolate chips or a dollop of jam to the center of each cupcake before baking.
- You can use any type of frosting you like, such as vanilla, chocolate, or cream cheese.
- Get creative with your decorations! Use different sprinkles, candies, and edible glitter.
