Ingredients

  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup milk
  • Food coloring (various colors)
  • Frosting (store-bought or homemade)
  • Sprinkles and other decorations

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  5. Divide the batter among several bowls (depending on how many colors you want). Add a few drops of food coloring to each bowl and mix until the color is evenly distributed.
  6. Fill each cupcake liner about 2/3 full, alternating colors or layering them for a fun look.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cupcakes cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  9. Once cooled, frost the cupcakes and decorate with sprinkles and other desired decorations.

Notes

  • For a fun twist, add a few chocolate chips or a dollop of jam to the center of each cupcake before baking.
  • You can use any type of frosting you like, such as vanilla, chocolate, or cream cheese.
