Description

This classic rhubarb bread recipe combines the tangy flavor of fresh rhubarb with a tender, moist crumb. It’s a delightful treat that’s perfect for breakfast, brunch, or a simple dessert. The recipe is easy to follow, making it a great choice for bakers of all skill levels.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 3 cups fresh rhubarb, chopped into 1/2-inch pieces
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. In a small bowl, whisk together the buttermilk.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
  7. Gently fold in the chopped rhubarb and nuts (if using).
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  11. Slice and serve. Enjoy!

Notes

  • For a sweeter bread, you can increase the amount of sugar slightly.
  • If you don’t have buttermilk, you can make a substitute by adding 1 tablespoon of lemon juice or white vinegar to 1 cup of milk and letting it sit for 5 minutes.
  • Rhubarb can be very tart. Adjust the sugar to your preference.
  • Store leftover bread in an airtight container at room temperature for up to 3 days.
