Ingredients

Scale
  • For the Cake:
  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 2 ounces red food coloring (liquid or gel)
  • 1 teaspoon white vinegar
  • For the Cream Cheese Frosting:
  • 8 ounces cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • For Decoration:
  • Fresh strawberries, sliced
  • Blueberries

Instructions

  1. Prepare the Cake: Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. In a separate bowl, combine buttermilk, red food coloring, and vinegar.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk mixture, beginning and ending with the dry ingredients. Mix until just combined.
  6. Pour batter into the prepared pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  8. Make the Frosting: In a large bowl, beat cream cheese and butter until smooth. Gradually add powdered sugar, mixing until combined. Stir in vanilla and salt.
  9. Assemble the Flag Cake: Once the cake is completely cool, frost the top with cream cheese frosting.
  10. Arrange sliced strawberries to form red stripes and blueberries in the upper left corner to represent the stars of the flag.
  11. Serve and enjoy!
