Description

These raspberry crumble bars are a delightful combination of sweet and tart flavors, with a buttery, crumbly topping and a jammy raspberry filling. They’re perfect for any occasion!


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup (2 sticks) unsalted butter, cold and cut into cubes
  • 1/4 teaspoon salt
  • 1 (12 ounce) jar raspberry preserves

Instructions

  1. Preheat oven to 375°F (190°C). Line a 9×13 inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large bowl, whisk together the flour, sugar, and salt.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Press half of the crumb mixture into the prepared baking pan.
  5. Spread the raspberry preserves evenly over the crumb base.
  6. Sprinkle the remaining crumb mixture over the raspberry preserves.
  7. Bake for 30-35 minutes, or until the top is golden brown.
  8. Let cool completely in the pan before lifting out using the parchment paper overhang and cutting into bars.

  • For a different flavor, try using a different flavor of preserves, such as blackberry or apricot.
