- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup (2 sticks) unsalted butter, cold and cut into cubes
- 1/4 teaspoon salt
- 1 (12 ounce) jar raspberry preserves
Instructions
- Preheat oven to 375°F (190°C). Line a 9×13 inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a large bowl, whisk together the flour, sugar, and salt.
- Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Press half of the crumb mixture into the prepared baking pan.
- Spread the raspberry preserves evenly over the crumb base.
- Sprinkle the remaining crumb mixture over the raspberry preserves.
- Bake for 30-35 minutes, or until the top is golden brown.
- Let cool completely in the pan before lifting out using the parchment paper overhang and cutting into bars.
Notes
- For a different flavor, try using a different flavor of preserves, such as blackberry or apricot.
- Make sure your butter is cold for the best crumbly texture.
- Store the bars in an airtight container at room temperature for up to 3 days.
