  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cubed
  • 1/4 cup ice water
  • For the Filling:
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 8 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 2 cups fresh raspberries, plus more for garnish
  • Optional: 1/4 cup raspberry jam, melted

Instructions

  1. Make the Crust: In a food processor, combine flour and salt. Add cold butter and pulse until the mixture resembles coarse crumbs. Gradually add ice water, pulsing until the dough just comes together. Form into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Preheat oven to 375°F (190°C). On a lightly floured surface, roll out the dough and fit it into a 9-inch pie plate. Trim and crimp the edges.
  3. Bake the crust for 15-20 minutes, or until golden brown. Let cool completely.
  4. Make the Filling: In a mixing bowl, beat heavy cream and sugar until stiff peaks form.
  5. In a separate bowl, beat cream cheese and vanilla extract until smooth. Gently fold the whipped cream into the cream cheese mixture.
  6. Gently fold in 1 1/2 cups of the fresh raspberries.
  7. Pour the filling into the cooled pie crust.
  8. Arrange remaining raspberries on top of the filling. If using, brush with melted raspberry jam for a glossy finish.
  9. Refrigerate for at least 2 hours before serving.

Notes

  • For a richer crust, use all butter.
  • If you don’t have a food processor, use a pastry cutter or your fingers to cut the butter into the flour.
  • Feel free to substitute other berries, like blueberries or blackberries.
  • For a smoother filling, make sure the cream cheese is fully softened.
