Description

Indulge in the perfect fall treat with these incredibly gooey and flavorful pumpkin white chocolate chip cookies. Packed with warm spices and creamy white chocolate, they’re a must-bake for the season.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup pumpkin puree (not pumpkin pie filling)
  • 1 ½ cups white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate medium bowl, whisk together the all-purpose flour, pumpkin pie spice, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Stir in the pumpkin puree until evenly incorporated into the dough. The dough will be soft.
  7. Gently fold in the white chocolate chips.
  8. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between cookies.
  9. Bake for 10-12 minutes, or until the edges are set and lightly golden brown, but the centers still look slightly underbaked.
  10. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For chewier cookies, slightly underbake them.
  • Ensure your pumpkin puree is well-drained if it seems very wet.
  • Store cooled cookies in an airtight container at room temperature for up to 3 days.
  • Add a sprinkle of sea salt on top of the cookies before baking for an extra flavor boost.
