Description

Soft, chewy pumpkin sugar cookies with a light dusting of cinnamon sugar — the perfect fall treat. These easy drop cookies are packed with pumpkin flavor and stay tender for days.


Ingredients

  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • For rolling: 1/4 cup granulated sugar mixed with 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In a large bowl, beat butter, granulated sugar, and brown sugar with an electric mixer until light and fluffy, about 3 minutes.
  4. Add egg and vanilla; beat until combined. Mix in pumpkin puree until smooth.
  5. Gradually add dry ingredients to wet ingredients, mixing on low speed just until combined. Do not overmix.
  6. Chill dough for at least 30 minutes (or up to 2 days) for easier handling and better texture.
  7. Scoop rounded tablespoons of dough (about 1.5 inches) and roll into balls. Roll each ball in the cinnamon-sugar mixture.
  8. Place on prepared baking sheets 2 inches apart. Flatten slightly with the bottom of a glass.
  9. Bake for 10–12 minutes, until edges are set and tops look slightly cracked. Centers will be soft.
  10. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.

Notes

  • For extra moisture, use 100% pure pumpkin puree — not pumpkin pie filling.
  • Chilling the dough is essential to prevent spreading and to develop flavor.
  • Store in an airtight container at room temperature for up to 5 days. Freeze baked cookies for up to 3 months.
