Description

  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 1/2 cup crushed pineapple, well drained
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt. Set aside.
  3. In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy, about 2 minutes.
  4. Add egg and vanilla extract; beat until combined. Mix in pumpkin puree and drained crushed pineapple until smooth.
  5. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Fold in chopped pecans if using.
  6. Drop rounded tablespoons of dough (about 1.5 tablespoons each) onto prepared baking sheets, spacing 2 inches apart.
  7. Bake for 12–14 minutes, or until edges are set and lightly golden. Centers will appear slightly soft.
  8. Let cookies cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.

  • For best results, drain the crushed pineapple thoroughly to avoid excess moisture.
  • If the dough seems too sticky, chill for 20 minutes before scooping.
