  • 1 (15-ounce) can pumpkin puree (not pumpkin pie filling)
  • 1 cup (200g) granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup (240ml) evaporated milk
  • 1/2 cup (120ml) heavy cream

Instructions

  1. Preheat oven to 425°F (220°C). Place the unbaked pie crust on a baking sheet.
  2. In a large bowl, whisk together the pumpkin puree, sugar, cinnamon, ginger, nutmeg, cloves, and salt until smooth.
  3. Add the eggs one at a time, whisking well after each addition.
  4. Gradually whisk in the evaporated milk and heavy cream until fully combined and the mixture is uniform.
  5. Pour the filling into the prepared pie crust.
  6. Bake at 425°F (220°C) for 15 minutes. Reduce oven temperature to 350°F (175°C) and continue baking for 40-50 minutes, or until the center is just set but still slightly jiggly.
  7. Remove from oven and cool completely on a wire rack, at least 2 hours. Refrigerate for at least 4 hours or overnight before serving for best texture.
  8. Serve chilled or at room temperature, optionally topped with whipped cream.

Notes

  • For a deeper flavor, toast the spices in a dry skillet for 1-2 minutes before adding to the filling.
  • To prevent cracking, do not overbake – the center should jiggle slightly when shaken.
  • If using a homemade crust, blind bake it for 10 minutes at 425°F (220°C) before adding the filling to avoid a soggy bottom.
