- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 (15-ounce) can pumpkin puree (not pumpkin pie filling)
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Powdered sugar, for dusting (optional)
- Cream cheese frosting, for sandwiching (optional)
Instructions
- In a large bowl, cream together the softened butter and both sugars until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Stir in the pumpkin puree until smooth.
- In a separate medium bowl, whisk together the flour, baking soda, salt, pumpkin pie spice, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
- Cover the dough with plastic wrap and refrigerate for at least 1 hour, or until firm enough to roll.
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Roll the dough into 1-inch balls and place them about 2 inches apart on the prepared baking sheets. Flatten slightly with the palm of your hand or the bottom of a glass.
- Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- Once cooled, dust with powdered sugar or sandwich two cookies together with cream cheese frosting, if desired.
Notes
- For a stronger pumpkin flavor, you can add an extra tablespoon of pumpkin puree, but you may need to add a little more flour.
- If you don’t have pumpkin pie spice, you can mix 1 teaspoon cinnamon, 1/4 teaspoon ginger, 1/8 teaspoon cloves, and a pinch of nutmeg.
- These cookies are delicious plain, but sandwiching them with a simple cream cheese frosting elevates them to a special treat.
