- 1 cup (2 sticks) unsalted butter, softened
- 2 cups granulated sugar, divided
- 2 large eggs, divided
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder

- 1 (15 ounce) can pumpkin puree
- 1 (12 ounce) can evaporated milk
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/8 teaspoon ground cloves
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Press half of the dough evenly into the bottom of the prepared baking pan.
- In a medium bowl, whisk together the pumpkin puree, evaporated milk, eggs, sugar, cinnamon, nutmeg, ginger, and cloves until smooth.
- Pour the pumpkin mixture evenly over the dough in the pan.
- Crumble the remaining half of the dough over the pumpkin layer.
- Bake for 35-45 minutes, or until the topping is golden brown and a toothpick inserted into the center comes out clean.
- Let the bars cool completely in the pan before cutting into squares.
Notes
- For an extra festive touch, sprinkle some cinnamon sugar over the top before baking.
- These bars can be stored in an airtight container at room temperature for up to 3 days, or refrigerated for up to a week.
- Serve plain or with a dollop of whipped cream or a scoop of vanilla ice cream.
