  • 2 cups granulated sugar, divided
  • 2 large eggs, divided
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 (15 ounce) can pumpkin puree
  • 1 (12 ounce) can evaporated milk
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Press half of the dough evenly into the bottom of the prepared baking pan.
  7. In a medium bowl, whisk together the pumpkin puree, evaporated milk, eggs, sugar, cinnamon, nutmeg, ginger, and cloves until smooth.
  8. Pour the pumpkin mixture evenly over the dough in the pan.
  9. Crumble the remaining half of the dough over the pumpkin layer.
  10. Bake for 35-45 minutes, or until the topping is golden brown and a toothpick inserted into the center comes out clean.
  11. Let the bars cool completely in the pan before cutting into squares.

Notes

  • For an extra festive touch, sprinkle some cinnamon sugar over the top before baking.
  • These bars can be stored in an airtight container at room temperature for up to 3 days, or refrigerated for up to a week.
