- 1 (15 ounce) can pumpkin puree
- 1/2 cup (1 stick) unsalted butter
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 4 cups powdered sugar
- 1/2 cup chopped pecans or walnuts (optional)
Instructions
- Line an 8×8 inch baking dish with parchment paper, leaving an overhang on the sides.
- In a medium saucepan, combine pumpkin puree, butter, pumpkin pie spice, vanilla extract, and salt.
- Cook over medium heat, stirring constantly, until the butter is melted and the mixture is smooth, about 3-5 minutes. Do not boil.
- Remove from heat and gradually whisk in the powdered sugar until well combined and smooth.
- If using, stir in the chopped nuts.
- Pour the fudge mixture into the prepared baking dish and spread evenly.
- Refrigerate for at least 2-3 hours, or until firm.
- Once firm, lift the fudge out of the dish using the parchment paper overhang. Cut into small squares before serving.
Notes
- For a smoother fudge, ensure your powdered sugar is free of lumps. Sifting it beforehand can help.
- Store leftover fudge in an airtight container at room temperature for up to 1 week, or in the refrigerator for longer storage.
- Feel free to add a few drops of orange food coloring for a more vibrant pumpkin color, though it’s not necessary for flavor.
