Ingredients

  • 1 (15 ounce) can pumpkin puree
  • 1/2 cup (1 stick) unsalted butter
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 4 cups powdered sugar
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Line an 8×8 inch baking dish with parchment paper, leaving an overhang on the sides.
  2. In a medium saucepan, combine pumpkin puree, butter, pumpkin pie spice, vanilla extract, and salt.
  3. Cook over medium heat, stirring constantly, until the butter is melted and the mixture is smooth, about 3-5 minutes. Do not boil.
  4. Remove from heat and gradually whisk in the powdered sugar until well combined and smooth.
  5. If using, stir in the chopped nuts.
  6. Pour the fudge mixture into the prepared baking dish and spread evenly.
  7. Refrigerate for at least 2-3 hours, or until firm.
  8. Once firm, lift the fudge out of the dish using the parchment paper overhang. Cut into small squares before serving.

Notes

  • For a smoother fudge, ensure your powdered sugar is free of lumps. Sifting it beforehand can help.
  • Store leftover fudge in an airtight container at room temperature for up to 1 week, or in the refrigerator for longer storage.
  • Feel free to add a few drops of orange food coloring for a more vibrant pumpkin color, though it’s not necessary for flavor.
