  • 3 large eggs

  • 1 cup sour cream
  • 2 tablespoons granulated sugar
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). In a medium bowl, mix graham cracker crumbs, ¼ cup sugar, and melted butter. Press firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.
  2. In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add vanilla and pumpkin puree, mixing until combined. Add eggs one at a time, beating just until blended. Stir in cinnamon, ginger, nutmeg, and cloves.
  3. Pour filling over crust. Place springform pan on a baking sheet to catch drips. Bake for 50-55 minutes, or until edges are set but center still jiggles slightly.
  4. While cheesecake bakes, prepare topping: whisk together sour cream, 2 tablespoons sugar, and ½ teaspoon vanilla. After removing cheesecake from oven, let cool for 10 minutes, then spread sour cream mixture evenly over top.
  5. Return to oven and bake for 5 more minutes. Cool completely on a wire rack, then refrigerate for at least 4 hours or overnight before serving.
