Description
This pumpkin cheesecake is a creamy, spiced dessert that combines the richness of cheesecake with the warm flavors of autumn. Topped with a sour cream layer and a buttery graham cracker crust, it’s the perfect holiday treat.
Ingredients
Scale
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 3 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup canned pumpkin puree
- 3 large eggs
- 1 teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- 1 cup sour cream
- 2 tablespoons granulated sugar
- ½ teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). In a medium bowl, mix graham cracker crumbs, ¼ cup sugar, and melted butter. Press firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.
- In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add vanilla and pumpkin puree, mixing until combined. Add eggs one at a time, beating just until blended. Stir in cinnamon, ginger, nutmeg, and cloves.
- Pour filling over crust. Place springform pan on a baking sheet to catch drips. Bake for 50-55 minutes, or until edges are set but center still jiggles slightly.
- While cheesecake bakes, prepare topping: whisk together sour cream, 2 tablespoons sugar, and ½ teaspoon vanilla. After removing cheesecake from oven, let cool for 10 minutes, then spread sour cream mixture evenly over top.
- Return to oven and bake for 5 more minutes. Cool completely on a wire rack, then refrigerate for at least 4 hours or overnight before serving.
Notes
- For a smoother texture, ensure all ingredients are at room temperature before mixing.
- To prevent cracks, do not overmix the batter and avoid opening the oven door during baking.
- This cheesecake can be made a day ahead and refrigerated; flavors meld beautifully overnight.
