Description

These pumpkin cheesecake bars feature a buttery graham cracker crust, a creamy cheesecake layer swirled with pumpkin puree and warm fall spices. Perfect for autumn gatherings or a cozy dessert any time.

  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree
  • ¼ cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
  2. In a small bowl, mix graham cracker crumbs, ¼ cup granulated sugar, and melted butter. Press evenly into the bottom of the prepared pan. Bake for 10 minutes, then let cool.
  3. In a large bowl, beat cream cheese and ½ cup granulated sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. Transfer 1 cup of the cream cheese mixture to a separate bowl. Stir in pumpkin puree, brown sugar, cinnamon, ginger, nutmeg, and cloves until combined.
  5. Pour the plain cream cheese mixture over the cooled crust. Drop spoonfuls of the pumpkin mixture on top. Use a knife to swirl gently.
  6. Bake for 35-40 minutes, or until edges are set and center is slightly jiggly. Let cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
  7. Cut into bars and serve chilled.

  • For a cleaner cut, chill the bars thoroughly and use a sharp knife wiped clean between cuts.
