Ingredients

  • 1 cup (240 ml) vegetable oil
  • 4 large eggs

  • 1 teaspoon ground cinnamon

For the frosting:

  • 8 oz (226 g) cream cheese, softened
  • 1/2 cup (113 g) unsalted butter, softened
  • 4 cups (480 g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together sugar and oil until well combined. Add eggs one at a time, beating well after each addition. Stir in pumpkin puree.
  3. In a separate bowl, sift together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix.
  5. Divide batter evenly between prepared pans. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool cakes in pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. For the frosting: Beat cream cheese and butter together until smooth. Gradually add powdered sugar, vanilla, and cinnamon; beat until light and fluffy.
  8. Place one cake layer on a serving plate, spread with frosting, then top with second layer. Frost top and sides. Refrigerate for at least 30 minutes before slicing.
