Description

These pumpkin blondies are the perfect fall dessert—soft, chewy, and packed with warm spices and real pumpkin puree. Easy to make in one bowl, they’re a delightful twist on classic blondies.


Ingredients

  • 1 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup pumpkin puree (not pumpkin pie filling)
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 cup white chocolate chips (optional)
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch square baking pan with parchment paper, leaving overhang on two sides.
  2. In a large bowl, whisk together melted butter and brown sugar until smooth.
  3. Add egg, vanilla extract, and pumpkin puree; whisk until fully combined.
  4. In a separate small bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  5. Add dry ingredients to wet ingredients and stir with a spatula until just combined—do not overmix.
  6. Fold in white chocolate chips and pecans if using.
  7. Spread batter evenly into prepared pan. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Let cool completely in the pan on a wire rack, then lift out using parchment overhang. Cut into 16 squares and serve.

Notes

  • For a nut-free version, omit the pecans or replace with pumpkin seeds.
  • Store blondies in an airtight container at room temperature for up to 4 days, or refrigerate for up to 1 week.
