  • 6 tablespoons unsalted butter, divided
  • 3/4 cup packed light brown sugar
  • 46 ripe plums, pitted and sliced (about 2 cups)
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. Melt 4 tablespoons of butter in the cake pan. Sprinkle brown sugar evenly over the melted butter.
  3. Arrange plum slices in a decorative pattern over the brown sugar.
  4. In a medium bowl, whisk together flour, baking powder, and salt.
  5. In a large bowl, cream together granulated sugar and softened butter until light and fluffy.
  6. Beat in the egg and vanilla extract.
  7. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  8. Pour the batter evenly over the plums.
  9. Bake for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes.
  11. Invert the cake onto a serving plate. Let cool completely before slicing and serving.

Notes

  • For best results, use ripe but firm plums.
  • You can substitute brown sugar with a mix of granulated sugar and molasses.
  • Serve warm or at room temperature.
