- 6 tablespoons unsalted butter, divided
- 3/4 cup packed light brown sugar
- 4–6 ripe plums, pitted and sliced (about 2 cups)
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup milk
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
- Melt 4 tablespoons of butter in the cake pan. Sprinkle brown sugar evenly over the melted butter.
- Arrange plum slices in a decorative pattern over the brown sugar.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream together granulated sugar and softened butter until light and fluffy.
- Beat in the egg and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
- Pour the batter evenly over the plums.
- Bake for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes.
- Invert the cake onto a serving plate. Let cool completely before slicing and serving.
Notes
- For best results, use ripe but firm plums.
- You can substitute brown sugar with a mix of granulated sugar and molasses.
- Serve warm or at room temperature.
- Delicious with a dollop of whipped cream or a scoop of vanilla ice cream.
