Description

  • 1/4 cup granulated sugar, plus more for sprinkling
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1 large egg, beaten (for egg wash)
  • Optional: Turbinado sugar (for sprinkling)

Instructions

  1. Make the Crust: In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, 1 tablespoon at a time, mixing until the dough just comes together. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. Prepare the Plums: In a bowl, combine the halved and pitted plums with the granulated sugar, lemon juice, and cinnamon. Gently toss to coat. Let the plums sit for 15 minutes to macerate.
  4. Assemble the Tart: Preheat the oven to 375°F (190°C). On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer the dough to a baking sheet lined with parchment paper.
  5. Arrange the plum mixture in the center of the dough, leaving a 1-2 inch border. Fold the edges of the dough over the plums, pleating as needed.
  6. Brush the exposed dough with the beaten egg and sprinkle with granulated sugar or turbinado sugar (optional).
  7. Bake the Tart: Bake for 40-45 minutes, or until the crust is golden brown and the plums are softened and bubbly.
  8. Cool and Serve: Let the tart cool on the baking sheet for at least 15 minutes before slicing and serving. Serve warm or at room temperature.
