- 4 pounds fresh plums, pitted and chopped
- 4 cups granulated sugar
- 1/4 cup lemon juice
- 1/2 cup water
Instructions
- In a large, heavy-bottomed pot, combine the chopped plums, sugar, lemon juice, and water.
- Stir well to ensure the sugar is evenly distributed.
- Bring the mixture to a boil over medium-high heat, stirring frequently to prevent sticking.
- Once boiling, reduce the heat to a simmer and continue to cook, stirring occasionally, for about 30-45 minutes, or until the jam has thickened and reaches the desired consistency. You can test the consistency by placing a small spoonful of jam on a chilled plate. If it wrinkles when you push it with your finger, it’s ready.
- Remove the pot from the heat and let it cool slightly. Skim off any foam that forms on the surface.
- Ladle the hot jam into sterilized jars, leaving about 1/4 inch of headspace.
- Wipe the rims of the jars clean, place the lids and rings on the jars, and tighten the rings.
- Process the jars in a boiling water bath for 10 minutes to seal them. If you prefer not to can, allow the jam to cool completely, then refrigerate.
Notes
- For a smoother jam, you can use an immersion blender to partially blend the plums before cooking.
- Adjust the sugar to your preference. Some recipes use less sugar, but this will affect the shelf life if canning.
- Sterilize jars and lids before canning to ensure proper sealing.
