Ingredients

  • 4 pounds fresh plums, pitted and chopped
  • 4 cups granulated sugar
  • 1/4 cup lemon juice
  • 1/2 cup water

Instructions

  1. In a large, heavy-bottomed pot, combine the chopped plums, sugar, lemon juice, and water.
  2. Stir well to ensure the sugar is evenly distributed.
  3. Bring the mixture to a boil over medium-high heat, stirring frequently to prevent sticking.
  4. Once boiling, reduce the heat to a simmer and continue to cook, stirring occasionally, for about 30-45 minutes, or until the jam has thickened and reaches the desired consistency. You can test the consistency by placing a small spoonful of jam on a chilled plate. If it wrinkles when you push it with your finger, it’s ready.
  5. Remove the pot from the heat and let it cool slightly. Skim off any foam that forms on the surface.
  6. Ladle the hot jam into sterilized jars, leaving about 1/4 inch of headspace.
  7. Wipe the rims of the jars clean, place the lids and rings on the jars, and tighten the rings.
  8. Process the jars in a boiling water bath for 10 minutes to seal them. If you prefer not to can, allow the jam to cool completely, then refrigerate.

Notes

  • For a smoother jam, you can use an immersion blender to partially blend the plums before cooking.
  • Adjust the sugar to your preference. Some recipes use less sugar, but this will affect the shelf life if canning.
  • Sterilize jars and lids before canning to ensure proper sealing.
